～Shabu-shabu served in two kinds of homemade soup stock
Our restaurant offers a variety of Okinawan beef, pork, and other meats prepared in a variety of ways.
You can taste it.
In this issue, we introduce our recommended shabu-shabu, which can be enjoyed refreshingly even during the hot season.
Our shabu-shabu is made with a blend of bonito flakes, grilled jaw, kelp, and other ingredients,
With "homemade umami broth" accented with garlic and ginger,
The broth is made from more than ten different ingredients, including beef bones, whole chicken, and vegetables, and is drawn for more than 10 hours.
It is served in two types of broth: "homemade umami spicy broth" with a spicy flavor and "homemade spicy soup stock".
Dip sweet-ripened island pork from Itoman or Misaki beef from Ishigaki Island in the broth of your choice and enjoy.
The meat is ready to eat when it is just briefly boiled and light pink in color.
Lettuce, green onions, and Okinawa's unique umi budou (sea grapes) are also served with shabu shabu.
Please enjoy it with meat.

At our restaurant, you can also enjoy fresh horse sashimi from Kumamoto Prefecture.
A variety of deliciously marbled horse sashimi parts are available.
The lean meat sashimi and the moderately fatty loin sashimi are the standard for horse meat,
The restaurant offers a wide variety of dishes, including tender and elegant fillet sashimi and a rare fresh liver.
You can choose your favorite part, but we recommend the horse sashimi platter.
This is a dish that can be enjoyed by comparing various parts of the dish.
Please take your time to enjoy it with your favorite sake, such as carefully selected Japanese sake or awamori.
